IN 1793 about a dozen villagers in the German town of Bad Wildbad took ill after eating blood sausages, a local pork staple prepared from raw meat, fat and blood. Six died; the cause was unknown. Similar outbreaks occurred in the region over the next two decades until an enterprising district health officer named Justinus Kerner decided to investigate the
origins of the illness. After five years of work—in the field and laboratory—he concluded that it was caused by a biological toxin in pork fat that blocked nerve signaling.
He suggested that one day the same “sausage poison,” in smaller doses, might be “of therapeutic value.” He proved to be right. Today botulinum toxin—purified, diluted and known as Botox—nets annual sales in the billions.
